These taste fantastic, but they ended up overproofed and collapsing on me. In my case, I think it was because I ended up waiting quite a while after the post-shape rest - I used a rather thin walled stockpot and it took a long time to bring the salt bath up to a boil. Tips for next time! I'll definitely be trying this again.
