If you want your banana bread to be more of a cake consistency (not be dry like true banana bread), bake the batter in 4 mini loaves, and reduce the bake time from perhaps your typical hour and 10 minutes to only 40 minutes! Wilton makes a 4 mini loaf pan that will accomadate the same quantity of batter as one large loaf pan you typically use. Bake your 4 loaves and cut time baked to only 40. The banana bread comes out so moist and has a wonderful crumb like cake. It is moist because you didn't subject the dense batter to overbaking like in one huge loaf. The exterior is as moist as the interior. Been doing this for years.
