Hi Deb, the answer depends on how many eggs are in your quick bread, as well as some of the other ingredients. If your quick bread only requires an egg or two (like in banana bread, commonly) then it tends to work just fine. If you're baking a heavy bread that has lots of mix-ins and requires the addition of more than four eggs, the final result will be notably different if you use flax to replace the eggs. You're welcome to still give it a try in these cases — you may find that you like the pleasantly dense nature of breads made with flax. Good luck and happy baking! Kye@KAF
