I tried coconut oil for the first time yesterday (I keep it around for my skin and hair) as it was a higher fat content (around 90%) and healthier option for infusing with THC. Threw a couple tablespoons in to the bowl and creamed with caster sugar, vanilla, plain flour and egg as I would usually do with butter and they were the best biscuits I had ever made. I was just trying to knock something together roughly, primarily as a vehicle for the cannabis, but the crumbly texture and full, rich flavour I got from the oil was unprecedented. Sure some hints of flavour were from the gram or two of weed in the batch, but the oil really impressed me, even if it *looks* as if it will make your food taste like petroleum jelly and I am a die-hard advocate for real butter.
