Solid coconut oil is an awesome replacement and a great flavor. I use that in place of crisco and fine ground oat flour for 25-40% of the regular flour with dark chocolate chips and my husband thinks he's in heaven! Next time I make shortbread, I'm going to try with coconut oil replacement.
