Butter carries flavor, so using the best kind does really make a difference. Some brands of butter contain more water than others, and this will change the final outcome. We like to use Cabot- a good quality Vermont butter- in our test kitchen work and at the KAF bakery. However, if you have a favorite brand, don't hesitate to use it. Happy baking! Laurie@KAF
