I have a handwritten recipe from my grandmother for Spritz cookies. It calls for butter and the note next to that said, "Aunt Freida always used butter". Family legend had it that Aunt Freida made the best Spritz cookies. As a kid we always made them with margarine. As an adult I started making them with butter as I have a kid with a soy allergy and discovered why Aunt Freida made the best Spritz cookies. They came out crisper and had a more distinct shape and didn't brown as quickly. In a pinch I could use margarine but the flavor and look just isn't the same.
