I have a hunch that whatever the original recipe calls for may make the best cookies, breads, etc. However, I bake only with butter. My wife makes several items with coconut oil, and her margarine rolls are best made with ....margarine, of course. I bake my French and Italian breads with extra virgin olive oil, and that seems to taste the best,
