I always enjoy your comparative baking articles. I'm surprised you didn't test coconut oil as a butter substitute. It's my go-to when I make something for my Celiac group that needs to be dairy-free as well as gluten-free. Also, when you add low fat cream cheese, you're also adding xanthan gum which will make a difference.
