Hi, Lucy. Egg wash can be tricky. A true obsessive would beat the eggs and strain them before using to make sure they're evenly mixed, but my personal go-to is a container of egg substitute. You can pour out just what you need, there are no gloppy chunks of egg white, and it works beautifully. The bubbles may just have been from the over proofed dough. Good luck on round 2! Susan
