Just made these for the first time this morning. They turned out very yummy! I had a few missteps though, mostly because I didn’t read the blog post first (I only read the straight recipe). I don’t think I kneaded the bread in the mixer for quite long enough. I mixed it with the the dough hook for over 20 minutes but the dough was still very sticky. I also overproofed them before baking while waiting for them to “lift” up like described. They didn’t quite get there and instead started to deflate a bit. I do have two questions; 1. My egg wash came out very unevenly browned. Not usually an issue in my oven so I’m assuming it was a problem with the wash. Any tips? 2. There are tons of tiny bubbles on the surface on the buns. Not an issue, but I was just wondering why. I’m happy with them for a first attempt. All the issues are aesthetics. They are light and fluffy and buttery. Yum!
