Coconut oil will make a mealy crust, not a flaky one. Coconut oil crusts also have a distinct coconut scent and slight coconut flavor to them, so unless the filling you're planning has a flavor that works with coconut (chocolate cream, for instance), you may want to try olive oil instead. Susan
