Hi Carrie, do you have a gluten-free setting on your bread machine? We find this setting works best. Of course, gluten-free bread will never have quite the same texture as a bread that is made with wheat flour, because the gluten-forming proteins in wheat flour play such an important part in the rise and structure of regular bread recipes. For gluten-free breads that are more like regular bread, you might want to explore using our new Gluten-Free Bread Flour. The gluten-free wheat starch in this flour allows the baker to make breads that are much closer in texture and taste to regular wheat breads. Note that while this product is suitable for those who can't tolerate gluten, it is not recommended for those who are allergic to wheat. We have a number of gluten-free bread recipes that we've created for this flour. Unfortunately, we don't recommend using this flour in your bread machine because the dough doesn't require as much kneading, and the rise times are too different.
