Hi there, Lait! We'd recommend covering the rolled-out dough with a lightly dampened tea towel or plastic wrap to help keep it from drying out. It can also be helpful to only work with one or two sheets of dough at a time when making ravioli too. We think you might also enjoy checking out episode 6 of our Isolation Baking Series, in that episode Jeffrey Hamelman makes fresh pasta dough and covers many different shaping techniques. We hope this helps and happy pasta making!
