If you're going to cook the pasta right away, you can go right from rolling the pasta to the boiling water to prevent sticking (add a drizzle of olive oil to the boiling water too). If you're going to dry your homemade pasta, then it's important to toss it with some flour so the nests don't become tangled messes. Semolina flour is a great ingredient for this, as it adds a slight bit of texture that's not present in all-purpose flour. Enjoy your spinach pasta! Kye@KAF
