Hi, Marianne. After rolling and cutting, I suggest laying your pasta out on some semolina, straight, for half an hour to let it dry some before you shape it in nests. Especially for a wetter pasta like Spinach, the cut pasta should be dried enough not to be sticky before bunching it together in any way. Once you have it cut and laid out, pick it up and move it around a little bit (every 5 or 10 minutes) until you see that the noodles are willing to touch each other without adhering. Then you can shape them into nests. Susan
