Hi Pat, our team of bakers is surprised to hear about the texture of your pasta, as we've never experienced "slimy" pasta ourselves. Perhaps your dough is too wet and could use a gentle flouring on each side before (and between) rollings? We encourage you to give our Baker's Hotline a call at 855-371-BAKE(2253) so we can gather more details from you and direct you towards the best solution. Adding Vital Wheat Gluten may make the noodles a bit more tough and chewy, so we'll try to come up with others tips and tricks to try. We look forward to hearing from you soon. Kye@KAF
