I've made homemade pasta for years with a hand-operated Atlas roller. I've tried quite a few times to make it with whole wheat flour, but every time it came out with a very slimy texture. Is there anything I can do to change the texture of 100% whole wheat pasta? Adding vital wheat gluten? I'm eager to hear your suggestions.
