Hi Pauly! Over on our fresh herb pasta blog, we show how to cut the pasta by hand, no machine needed. For the ziti, elbows, etc. you really do need an extruder, it's not really something you can do by hand. If you Google hand-shaped pasta though, you should get info on how to make orichette, tortellini, etc. xo ~ MJ
