Hi Lyn,
You can make great pasta dough out of just flour and water. Try using 1 cup of flour and enough water to make the dough into the "lumpy grits" stage. It should take between 1/4 and 1/3 cup.
I find this type of pasta works best as small shapes, like orichette, rather than large flat noodles. ~ MJ
