I grew up in an Italian household where the women all made home made pasta on the holidays, and as a child, I helped shape, cut, and dry it on dish towels spread atop nonna's bed. I am a gourmet cook and baker, with a pasta machine, yet I have never attempted to make my own pasta because of a lack of knowledge about the proper proportions for the ingredients. You have finally taken away my fear with this simple recipe and the great photos and explanations about consistency. I feel giddy, like a whole new world has opened up for me.
