Hi terrydanner. Let your charcoal burn off and get to to ash, and then follow the same steps as you would with gas. Be sure your grill is well oiled, and you base your bake time off of how your bottom crust looks. If it looks baked enough to flip, do so. Pizza bakes in anywhere between 7-10 minutes on the grill. Do some experimenting to see what works best for you. I have to imagine the smokey flavor of the charcoal is going to make your pizza taste amazing! -Gwen
