Leslie, you flip the pizza over so the grilled part is on top, then you add the toppings. If your hands can stand the heat, add them right while the pizza's on the grill; saves having to move it an extra time. But if you want to take your time over the toppings, it's probably best to take the pizza off the grill and close the grill cover, to keep it hot while you work. Enjoy - PJH
