Hi there, Mrs. Chiu! We haven't tried out a cold fermentation period with this recipe but, yes it should help to develop flavor in your dough just as it does with those made with wheat flour. You'll be doing a bit of an experiment but we don't see why it wouldn't work out. Kindly, Morgan@KAF
