So I have been looking into the same thing. Xantham gum kills my stomach; especially, if I sneak a bite prior to cooking whatever I am baking. Hopefully this will help a little. I have yet to try any options as I have been using pre made GF flour that has xantham gum in it. As soon as it is out I am going back to my own blend or the KA GF w/o xantham gum.
