to Michaelbefus There's a brand of gluten-free cookies that come in ginger or cinnamon flavored (I think it's Nu-del) that I plan to use for a "graham" cracker crust. Haven't done it yet, but I bet it'll work. I'd reduce the amount of sugar since they're sweeter than graham crackers.
