I am surprised to see a cake baked in a loaf pan - I wouldn't have thought it was possible. I absolutely LOVE this idea! Minus the flaked coconut, you have a basic white cake mix that can easily be transformed into whatever you want. However, my best friends loves coconut cake but only she and one of her younger sisters like it. So this would make a great "in between" cake for the two of them. LET THEM EAT CAKE!
