That’s an interesting observation about egg sizes!!!

I make a lot of pasta and the stated rule of thumb is 1 pound of flour (454 grams) to four large eggs.

I always find that that is way too much flour for the amount of egg so I start at 375 g and add from there.

I’ll have to try XL eggs
