Hi there, PJ's experiments seem to indicate that the shine has more to do with using chocolate chips and heating the sugar and butter together to fully dissolve the sugar, so I think you should have good luck achieving a shiny crust, even when using egg substitutes or making a brownie recipe that doesn't require eggs.
