Thank you for this explanation of egg size in recipes! When I first noticed the difference in the actual size of eggs, as opposed to the size printed on the egg carton, I didn't know what to do. So, I just began to add an extra egg to whatever recipe I was making. Of course, that's a hit and miss strategy, depending on how many eggs the recipe calls for.
