This is a great article but as a professional baker, I discovered a way to keep cake layers flat when baking them. We used it at my bakery for years and it worked for almost every cake. The carrot cake refused to cooperate but it only had a bit of a dome. With this method you don't have to trim the top of the cake to get it flat. It bakes flat. I thought your readers might like to know about this.
