I love this cake!
It is becoming my go to dessert !
However I’m not a big fan of strawberries unless they are organic and perfectly ripe, so I use blueberries. Easy to get and almost always delicious ! I find I need the whip cream to add some wetness. It’s always a hit! I made it again today and I am thinking about using the chocolate ganache this time to wet it. I am looking forward to summer when I can find perfect strawberries to dress it with! I also find it needs at least some powdered sugar after flipping it our to dress it up before adding the fruit. Maybe I’m not getting the sugar from the pan cooked enough? Or I need to use butter instead of a spray coconut spray in the pan to get a pretty look? Or maybe it just isn’t suppose to look pretty without the fruit? Anyway it always taste great! I like having a piece in the morning with my coffee too!
