Hi Sherry! We'd definitely recommend mixing this batter by hand — other than whipping the egg whites of course. Hand mixing and folding the eggs whites in until they're just combined retains a lot of the nice air bubbles, leaving you with lighter, more airy cupcakes. Annabelle@KAF
