I like to bake but generally don't because of the calorie, flour, sugar, carb thing. I made this cake & it's absolutely delicious. The texture is perfect. I'm experimenting with sweeteners & used half sugar and half xylitol to see what effect the sweetener would have. None that I can see or taste, so will use all xylitol next time (assuming no bad side effects from it). Great to be able to bake something. I'm going to try the little shortbread cooking next week. Also, so glad to be able to buy your almond flour in my grocery.
