There are 3 bananas in this recipe which is not insignificant. Applesauce may be used for some of the banana but not all. It will add back too much moisture. I have heard pumpkin puree is a suitable substitute but you will need to add back some sweetness to the recipe since pumpkin is pretty mild. You will have to do some experimenting, Laurie!
