Hi Jan, both baked cookies and cookie dough generally freeze very well, so you may want to have some of your cookie balls stored in the freezer (which will allow you to spread out your dough preparation over a few weeks). However, you'll probably have difficulty baking all the cookies those last few days before the wedding, so you may want to freeze some baked cookies as well. Given the shorter shelf life for gluten-free cookies, those might be good candidates for freezing, but I wouldn't hesitate to freeze some of the regular cookies as well. I hope you have a lot of freezer space available! I don't know what is involved with the Chocolate Covered Candy Cookies, but generally I would try to avoid freezing cookies that have a chocolate coating, as the appearance of the chocolate may suffer after freezing and thawing. Good luck and don't forget to leave yourself time and energy to enjoy your granddaughter's wedding! I'm sure she will love and appreciate whatever you bring.
