I always make cookie balls first, then refrigerate a bit for the few I am going to bake (I confess, I also eat several cookie balls' worth of dough), and freeze the rest. When they are frozen in freezer ziplock bags, they don't dry out, and they are available for cookie emergencies (like unexpected visitors) over the next few weeks. They rarely last longer than that because they get eaten.
