Hi Claire,

I always scoop cookies into balls and refrigerate unless they are slice and bake (log) cookies, and they come out great. Often, I only bake half one night and place the other half in the fridge on tray or in the freezer in a zip bag for another night of freshly baked cookies. I've never had an issue.
