Hi Joey, you definitely won't get as much rise if your cookie recipe contains only baking soda (as opposed to baking powder, or a combination of both) and you leave it in the refrigerator for an extended time. However, the recipe PJ illustrates only has baking soda in it, and the cookies still baked fine; just don't expect as much puff from this sort of recipe after refrigeration. The type of recipe you indicate will likely still benefit from refrigeration since the oats will soak up more moisture after some time in the refrigerator.
