Does the baking soda still work to raise the cookie if it's spent that long in a fridge? I was under the impression baking soda is activated as soon as it comes in to contact with an acidic ingredients in the recipe? Would this also work with a less traditional cookie, made with oats, maple syrup and coconut oil for example?
