I, too, have been refrigerating cookie dough before baking for many years. In fact, in December, I had four different cookie doughs in my fridge!

I would bake fresh cookies as needed for family, friends or for gifts; and I have kept cookie dough refrigerated for about 2-3 weeks without issue. My ginger/spice cookies definitely benefit from 'marinating' in the fridge for a few days, the flavor of the married spices is outstanding!
