A long time ago a friend who made the BEST chocolate chip cookies swore that it had to do with the temperature of all the ingredients. Butter and eggs at room temperature and chips frozen. Then chilling the dough for an hour and either baking only one cookie sheet at a time or rotating them top and bottom shelves half way through. Has worked every time for puffy cookies!
