Hi Linda! We imagine that using some cornstarch will create a cakier texture since it will imitate cake flour (which includes either corn starch or wheat starch) so that's a great way to create a really soft, tender textured cookie. Storing cookies in a container with a slice of apple tucked into the corner of the container helps keep them soft longer, a marshmallow can do the trick too.
