I'm unsure if diabetics can eat coconut sugar, but I've found that this is a great alternative to both brown and white sugars! You can substitute it 1x1. You also mentioned egg in your comment, is that something your husband needs to avoid as well? My favorite egg substitutes are flax meal eggs (1Tbsp flax meal + 2.5Tbsp hot water = 1 egg) and Bob's Red Mill egg replacer. Check those out if you need a good substitute, however, deciding on the use of either of the two heavily depends on the recipe, so it may take some trial and error. (-:
