There are a few different reasons why cookies spread, Vicki, just one of which is the temperature of the dough. It certainly helps to chill the dough before baking, but you'll also want to take into consideration a few other factors, like the amount of sugar in the dough (the more sugar, the more the cookies spread) and the ratio of flour to other ingredients. You might want to try decreasing the sugar by a few tablespoons and adding in a few tablespoons of flour to see if you can get the thick, chewy cookie you're looking for. Don't forget to chill!
