It's hard to believe, Sally, but yes: Some of those basic changes that we've noted in the blog post start to happen in just 30 minutes. The sugar starts to absorb some of the free liquid, the flavors start to concentrate, and the dough begins to break down into its component parts (simple sugars). All of these transformations result in cookies that are out-of-this-world delicious (or at least more delicious than their un-chilled counterparts)!
