This is a good question, Marina. Time spent in the frig is going to help just about any cookie dough to develop more flavor, prevent more spread and carmelize. Generally, cookies that are stamped, do not spread anyway. So, the only advantage to chilling that I can see would be for enhanced flavor. If you decide to chill, stamp first, then chill. Enjoy!
