Hi Andy, it sounds like your desire is easy enough to satisfy: simply use water as the liquid in your ice "cream" and as you noted, add just enough cream to get the consistency you're looking for. You can use your favorite fresh fruit and cook it down with a bit of sugar and then add water and cream, if desired. Our Strawberry Sorbet recipe might be a great place for you to start.
