I know this post is getting old, but I wanted to share what I did last night. I followed Ben & Jerry's sweet cream base but used trader joe's coconut cream and coconut/cashew milk instead of heavy cream and whole milk. The consistency was perfect! I subbed 2 cups coconut cream for the 2 cups heavy cream. For the whole milk I subbed about 3/4 cup coconut/cashew milk plus 1/4 coconut cream mixed in. As far as the taste, there was a rather strong coconut taste on the backend. However, after mixing in some non dairy chocolate chips and some cherry ice cream topping I could not taste the coconut at all! It tasted just like I was eating dairy ice cream.
