Thank you so much for this article! There's lots of great information for me to use. I am delighted that someone else has mentioned bananas. I use them regularly when making my non dairy ice cream to improve the texture without a lot of fat. Avocados, also mentioned earlier, also work well, with surprisingly little impact on flavor.
